The Springs at Borrego RV Resort
Borrego Springs, California: It was a bit of March April
Madness around here today. We spent the afternoon watching NCAA hoops. On our
awning-shaded patio, on our exterior television. Perfect day for
me.
Again, we woke to glorious warm sun. We each ran four miles (not together, of course)
and after that... well, I would have preferred to just go back to bed. But
instead, I grabbed my camera and snapped photos of this lovely RV resort. Maybe I can convince you to come to
lovely Borrego Springs? On second-thought, it
is already so difficult to get a reservation at
The Springs at Borrego RV Resort, maybe I
should just keep quiet?

Since we arrived a day early for our reservation, we had to move - four
campsites down - yesterday morning. This will be our new home through
Wednesday.

All sites are paved pull-throughs, with 30 & 50 amp electric service, water, sewer, cable
and (fee) wifi. Premium sites are extra-long and have either golf course
views, or are close to the "beach" area. The Springs at Borrego RV
Resort is meticulously maintained. Pristine at all moments. Workers are
constantly grooming, raking and sweeping. I am also happy to report the
resort has a fabulous recycling center! There are various citrus trees planted
throughout the resort and you are welcome to whichever cocktail garnish
fruit you desire/require.

This building holds the bath house, laundry center, a
small shop, exercise room, meeting room and full party facilities,
complete with kitchen.

The building is U-shaped and acts as a wind block for
the swimming pool and the hot tubs. They have one large communal hot tub
and several "hot tubs for two". All water in the spas is from their own
naturally-fed mineral hot spring. The water must be cooled before it can
go into the hot tubs! (I didn't take photos because every tub was
occupied
this morning. Privacy, please!)

The resort is also nicely eco-scaped with native
plants. This barrel cactus is starting to bloom.

And the ocotillo is blooming here too! So pretty.
I wonder why there are so many hummingbirds in the park!
We like to stay here because they have a golf course! Not one of
those wimpy "executive" courses either. The Springs at Borrego have a regulation
9-hole course.

This photo was taken from the championship tee on the
first hole. We are planning to play tomorrow - if it isn't too windy - so I
will take more photos then.

This photo shows the ninth hole. A small lake/large pond
is situated here and the park provides a sandy beach with fire pits, BBQ
grills, beach chairs and covered ramadas around the lake. No swimming,
but catch-and-release fishing is allowed. Yesterday, DT helped a little
girl take a blue gill off her hook!

If you are exhausted after a long day of doing nothing -
grab a glass of wine and relax by the lake. The park hosts cook-outs,
wine tastings, music, star-gazing and other fun events nearly every day.

Or grab a chair and watch the golfers putt-out on the
ninth/eighteenth hole.
Since I have so much white fish in the freezer from Puerto
Penasco, I decided to make The Barefoot Contessa's
Mustard Roasted Fish. Except I didn't have creme fraiche and I didn't have
shallots. (I was also 99.9% sure I could not find creme fraiche - a French-style
sour cream - at the local Borrego Springs grocer.) I did have fat-free
plain Greek-style yoghurt and green onions though, so I invented my own low-fat
version of the Contessa's recipe. Actually, it was really good. I think from
now on when I make Mustard Roasted Fish, I will use fat-free Greek yoghurt.

Look at the gorgeous flounder fillets we brought from
Puerto Penasco!
Looks as if it will a good game on Monday - Duke v Butler. My bracket
has long been shot... as, no doubt, has yours. Isn't college basketball
just so much fun!
