BYOB (Bring Your Own Bed)

Friday | 12 December 2008 | Indio, California: Move along, people. Nothing to see here. Just a travel day. And not even much of a drive from Borrego Springs back to Indio, where our bus will remain over the holidays... and from where we will venture forth in our tow-car. Lisa is coming for the weekend. We had big plans for Shabbat together, but apparently some network executives needed to speak with our Dear Girl at 4 o'clock... so she (and our Grand Dawg, Reese) arrived late.

Again, we had great weather, but the sky is now cloudy and rain is predicted. Here is one photo I forgot to post - the dog park at the RV park. Can you believe this great area? Lucky Dogs stay at The Springs at Borrego RV Resort. I can't say enough about this RV resort. Love it!

After settling-in to our campsite (rented through a private party), we met our new neighbors and their dogs. It will be fun stay here in Indio. Our site has a large grass area behind our motorhome and we have the use of a golf cart! Watch out!

We observed Shabbat with another great meal (because I cooked). I sautéed crimini mushroom with minced onion, garlic and fresh thyme. When the mixture cooled, I added a little crumbled goat cheese and stuffed the mixture inside pounded chicken breasts. The packets were then browned in olive oil, covered, removed from heat and left to finish cooking on their own. Delicious - and the meat was so tender. I also served steamed green beans, a tomato salad and bread (though not Challah, sorry)... and we dined before Lisa arrived.

Our girl finally arrived in Indio. Reese was so excited to see us again. Lisa had a plate of food, we chatted for several hours and then she and her Dad blew-up her BYOB (Bring Your Own Bed) - Lisa keeps an AirBed for guests, so she brought it along for the weekend here.
