Black Bean Salad

On a hot summer day, a cold black bean salad really hits the spot. This salad is nice served as a main course or as a side dish. A very easy recipe.

SALAD:
2 - 15 oz. cans black beans, rinsed and drained
1 green pepper, minced
1 tomato, seeded and minced
½ cup minced red onion
½ cup chopped, minced fresh cilantro leaves

DRESSING:
2 Tablespoons fresh lemon (or lime) juice
3 Tablespoons olive oil
½ to one fresh jalapeno pepper, finely minced
Salt to taste

In a medium bowl, mix black beans, green pepper, tomato, red onion and cilantro. Stir dressing ingredients in a small bowl and pour over salad. Salt to taste. Chill and serve.

Serves 6 as a side dish.
