Corfu Restaurant Bread

The Liston on Corfu Island

We spent a week on Corfu, dining each evening at the quaintest restaurants - a few right on the beach. Every restaurant served a basket of this warm bread. It is a very, very plain and simple bread with few ingredients - yet it is perfect with highly spiced foods. A small golden loaf - the top is smooth, not slashed - sized right for 4-6 people.

Add in order to Bread Machine:
¾ cup warm water
2 teaspoons sugar
2 teaspoons yeast

Leave yeast and sugar to soften and bubble in water for approximately 10-15 minutes.

Then add:
2 cups flour
1 teaspoon salt

Use white/dough cycle. After cycle is finished, shape into 12" long loaf. Place on oiled baking sheet and rise for 30-40 minutes, or until doubled. Bake at 375° for 20-25 minutes.
