One-Pot Mac & Cheese

Hello! Where did September go? With all the excitement of a new granddaughter, celebrating Dad's 80th, Duck tailgates and Rosh Hashanah, we have been running around like the proverbial headless chickens. There are no days of rest scheduled on my calendar until November.

In fact, we head out in the motorhome tomorrow for a Thursday Night (weird, right?) football game in Eugene. Ducks v Arizona. The game will air on ESPN at 7:30p pacific. We are serving a Southwest-inspired meal - tacos and margaritas - and are expecting the usual cast of thousands... everyone will over eat and then we prepare for the Yom Kippur fast.

For a day of fasting and praying, a lot of cooking is required. It is tradition at our house to have matzo ball soup the evening prior, and "breakfast for dinner" to break the fast. This year, I am going to try latkes in my waffle iron, because... well, why the heck not!

If Mother Nature has been paying attention, maybe the temperatures are dropping and leaves are turning color in your neighborhood. If so, this one pot easy Mac & Cheese, shared in the September RV Goddess Newsletter, is a cozy warming meal - especially if you have kids or grandkids to feed.

Mac & Cheese

Ban the Box! This kid-friendly recipe could not be easier. Four ingredients, one pot and a colander. The recipe is easily halved or doubled, and the ingredients are found in every American supermarket and no one will judge you for buying a package of already-grated cheese. Add a little salt, if you desire.

2 cups elbow noodles, about 8 ounces
1 cup half & half
1 cup milk
2 cups grated sharp cheddar cheese

Cook pasta according to package directions. Drain (do not rinse) and let rest in colander while you prepare the sauce. To the same pot used to cook the pasta, add the half & half and milk. Warm over medium heat for about one minute, then sprinkle the cheese over and stir continuously as the cheese melts into the cream mixture, about one minute. Do not let the mixture come to a boil. When the sauce is smooth, remove from heat and return the pasta to the pot. Toss to mix and serve. Sauce will thicken as it cools. Serves 4.
