Pan-Roasted Chicken with Harissa Chickpeas
Indio, California: As most of the Nation is covered in
snow and suffering through freezing temperatures, the Coachella Valley is bathed
in warm sunshine.
Dave golfed at
Indian Springs Golf Club with the men's group from the RV resort, so I
had much of the day to myself.
were a few interesting recipes in the January edition of
magazine, and tonight I prepared
Pan-Roasted Chicken with Harissa Chickpeas.
I figured we both love chicken thighs and we both love chickpeas (garbanzo beans) and
we both like a little spice (harissa chili paste) in our lives, so we would love this
All went well with the preparation - it is a super-simple, one-pan recipe - but
it was too much spicy harissa paste
for My Driver.
Not me. I just loved the sauce with the beans and scooped it up in bits of pita
Due to the splatter-factor, you may not want to prepare this chicken in your RV
kitchen, but really recommend you give it a try if you like spicy dishes... or
just cut-back on the chili paste if you do not.
SLOGGER REPORT: Another four mile run around
the block. 8 miles for the year. Happy I have tomorrow off... because while
cleaning-up last night after dinner, a glass bottle of beer fell out of the
fridge and luckily did not shatter on the tile. It did not break because it
landed on my foot... which is now black, blue, swollen and very sore!
